setting up servers thru the internet in a VPN

ok here is the deal. I am new to how to setup VPNs, I have the idea of how they work, just need the old veterans to help me out some.
checkout solutions like hamachi and they look nice.

Ok, the deal is I have 2 servers, each on a different hotel. They are running a program called NiteVision which keeps track of hotel rooms available and how much the guest spends.
Well, they want to connect both nitevision servers from both hotels.

I thought about using the internet because it is the most reliable solution. I also thought about using a "constant on" VPN between the servers.

HOw can this be made? I was thinking of installing vpn programs on both servers, and running then. Giving each server the ip information of the other and having them constantly comunicate.
Can nay one give me an idea of how to do this?
It is sort of a perr to peer network over the internet for both servers. Anyone has any experience running peer to peer as a VPN that is constanly on?
